They're character tropes from stuff like light novels; of course real people are more complicated than that, but they're not a bad shorthand.
A tsundere's someone who kind of runs hot and cold, I guess you could say. They might get kind of cranky or hostile, but they're soft for the person they like. A himedere's kind of similar, except they're a lot bossier when they aren't showing their sweet side, like they're royalty.
I suppose that's not a bad plan, though, but you might need to do it pretty often.
