Spaghetti westerns refers to a movie genre that is a European made an offshoot of westerns.

Westerns were largely an American nationalism fantasy about heroic adventures and inherent goodness of the white man in an era where they had a war over the preservation of slavery. The European offshoot tends to push a sex and violence, all people are bastards but especially the government angle on the historical era.

It's not exactly more historically accurate to the nationalism fantasy version, but it's more fun by doing away with the arbitrary moralizing and whitewash of history.

Oh, that is very interesting. So in a sense, it sounds like they are at once a commentary on the self-satisfied stories this nation told about itself and a subtle validation, given that one cannot fully disavow the implications of a tradition if all its trappings are maintained intact...

Where does the spaghetti come into it?

The country that most of them were filmed and produced in was Italy, Italy being primarily known in the west for pasta. While some were filmed in other parts of Europe, as longs as they maintained the aesthetic there wasn't that much interest in differentiating them.

At least until China made some efforts in the industry inspired by spaghetti westerns, those were referred to as noodle westerns to refer to the inspiration while changing it just enough to reference the different origin.
