So, puzzles. Or very slow chess games. Puzzles, puzzles... jigsaw ones? 3D ones? Logic ones? Gives a whole range of 'things' to work with, if you don't mind taking turns. Ask him to read logic puzzles while he's awake and you can have more than one to think about until you're active. All the others can be combined efforts, I guess.
You could also do something crazy like think up scavenger hunts to send him on when he's in control. Then you're along for the ride watching him try to figure it out, if it's the kind of thing he'd do.
