I've spoken with half a dozen Prismals and counting, yet none can tell me the following with any certainty.
- Why they can't produce Chroma for themselves.
- Why those brought from outside Prismatica can.
- How Moonlacing functions at its core.
If anyone else, perhaps not a local, has information please share it.

Multiple times.
I'm very concerned about the physical changes thing myself. Undead... Appear to vary by world, where I'm from it usually involves necromancy, horrible death circumstances, or undead creating more undead. They tend to be very hungry, and easily as vicious as any demon.
Haven't seen anyone younger than a teen yet, but limited sample and I'd bet that if there are kids among us, the government's moving in fast to take care of them. They seem the sort to actively try to step in for that sorta thing.
... That last one is absolutely terrifying to think about, and I've heard nothing there and hope that one's fake.

Definitely not. But, I suppose you could if you have traits of an animal that has something else going on.

I've certainly not met any Moonblessed under the age of sixteen or seventeen. Most of the physical changes involve taking on the features of some manner of beast; I've had rabbit ears my first two months here, but I find that that recently, I've started glowing in odd places instead.
It depends.
I wouldn't know anything about losing genitalia.
There's a few of us undead here, but if you'd like the details, I'm going to be here all week! But the long and short of it is: an undead being is any creature or person that is physically dead, but still animate, with "undeath" simply being the term used to refer to this state of being.
Your basic undead is something like a zombie or animated skeleton, which has movement but lacks a will of its own or capacity to reason. They're mostly used as the servants of some sort of greater entity, but they're actually rather harmless if currently following orders that you're not in the way of.
Ghouls, ghasts, and wights? Ravenous fiends. Very hungry, very brutal. Capable of making more of their kind. Technically capable of conversation, if only to try to convince you that you only need one of your arms. Do not ever attempt to summon these unless you're either very desperate or know what you're doing. (You probably do not. I certainly don't know what I'd do.)
Most corporeal undead are similarly mindless, but exceptions do occur. Incorporeal undead, ghosts and the like? Nearly always intelligent. Intelligent corporeal undead have a few different forms they can take, I can go more into detail on those if you'd like.
As far as intelligent undead go, each one is different. Like a beautiful, cadaverous snowflake.

1. I've gotten rabbit ears and a tail during the Iris moon cycle. That's usually what I get, but last month, nothing happened to me. This month, I got wings on top of everything. Does electric magic count as a physical change?
2. I'm 17. I know people close to my age, and people who are much older.
3. I didn't lose anything myself, but I can't speak for everyone else.

1. i was cordis for awhile and had some cat furry shit going on and then somehow all of my chroma got sapped and now i'm sanguis so i grow horns and my hair turns into wool i'd hate it if my bf didn't braid it for me

I do not know much, as I am very new here, but I am over five hundred? It is very young for my people, but old for most. As for the undeath, that is very much different from different worlds, I would think.
In mine, it was very bad. We had a big war against the undead, but some of them helped us? So there are good ones, too.

Unfortunately, as others have likely told you, we have very little in the way of answers regarding the first three questions. I will say the generation of mana (magic, chroma, whatever term you'd like to use) is tied to sex in my world so it's not an unheard of phenomenon.
You will find a broad range of dead, undead, supernatural, and otherwise powered (or unpowered) individuals here. Definitions of these terms may also vary.
I couldn't comment on a loss of genitalia, but don't be surprised if what you have starts behaving differently than usual.
To the other questions, it seems you've gotten a variety of answers. Good luck with sorting through them.

- Rabbit ears and a tail so far. My changes seem to be relatively mundane compared to others.
-Unsure but possibly the ability for people who have died in their own world to be brought here from an earlier point in time before their passing?
- I've yet to meet anyone younger than sixteen, at least by their own age standards. I'm nineteen, personally.
- Uncommon, but it seems someone recently gained a more... unfortunate trait of being, I believe, an owl.
